My mom has been feeling under the weather the last few days. Bad enough that she has even left work early. She has never been one to want Chicken Noodle soup when she isn’t feeling well. Nope- she wants Potato Soup. It’s what her mom made her when she was younger, and it’s still what she wants. Sadly, her mom (my grandmother) has passed (13 years ago this week…maybe another reason she hasn’t been feeling well), and she doesn’t make it for herself.
Well, I don’t have grandma’s recipe, but I made her some soup. Nick tried it and liked it (and added cheese on top of his soup), so hopefully it will pass moms taste test!
Potato Soup
Prep time: 1 to 1 1/2 hours
3 pounds russet potatoes, peeled and cut into bite-sized pieces
1 medium onion, diced
1 cup (2 sticks) butter
1/2 cup to 1 1/2 cups half and half
1/2 teaspoon pepper
2 teaspoons salt
Place the potatoes and onions in a large sauce pot. Add enough water to just cover the potatoes and onions. Place over medium-high heat and bring to a boil. Boil until the potatoes are fork tender. Remove from heat and mash (DO NOT drain the water). Add in the butter, salt, pepper, and the half and half (using just enough to get the consistency you like…I used 1 cup). Return the soup to the heat, this time on medium, and let simmer for about 15-20 minutes. Serve as is, or add bacon, shredded cheese and sour cream for a loaded potato soup! Enjoy!
If you have leftovers, store in the refrigerator. Reheat on the stove over medium heat- adding more half and half (or milk), if the soup has thickened up.

Karen, Thank you. She is starting to feel better- just still hanging onto a cough. Yes- she did enjoy the soup…one day she ate it for breakfast and lunch!
I always put bacon in my potato soup, But I’m sure it’s delicious (not to mention healthier) with out it. Hope your mom feels better.

Alison, She likes her soup plain, but she is feeling better, so I think the magic ingredient (love) worked!
