I told you earlier that I had fallen in love with The Cookie Dough Lover’s Cookbook.
I really want to make everything in this cookbook.
Which means that I will be eating a lot of cookie dough! At least I don’t eat it all by myself…I share (2 for me, 1 for you!)! See how nice I am!!
Geez. I just realized that with these 2 recipes, I haven’t made it past page 19. I’ve got a long way to go!
Mini M&M Cookie Dough Truffles
Recipe adapted from The Cookie Dough Lover’s Cookbook
Prep time: 55 minutes (30 minutes active, 25 minutes inactive)
1/2 cup (1 stick) butter, softened
1/4 cup sugar
1/2 cup brown sugar, lightly packed
2 tablespoons half and half (can use milk)
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 1/4 cup flour
2/3 cup mini M&M’s
milk melting chocolate for dipping
Using a stand mixer (or hand-held mixer) cream together the butter and sugars. Let the mixer run about 2 minutes, or until the mixture is lighter in color. Add in the half and half and vanilla extract and mix well. Mix in the salt and flour, then turning the mixer on low speed, fold in the mini M&M’s.
With a small ice cream scoop, scoop the dough onto a wax-paper lined cookie sheet. Freeze these for 10 to 15 minutes, or until they are firm enough to handle. Once the dough scoops are solid, melt your milk chocolate according to your favorite method. Roll each scoop into a ball and using a dipping tool, dip each ball into the chocolate. Place back onto the wax paper and let the chocolate set. Enjoy!
Made with love, not calories!

Now I am stuck at work and starving, these look delicious
