Here is day 8 of the 12 Days of Christmas Cookies!
Have you ever craved pecan pie, but didn’t want to mess around with making the pie crust? Here is a cookie that gives you the wonderful flavor of a pecan pie, but no pie crust!
Pecan Pie Cookies
Recipe lightly adapted from Land O’Lakes via Yum Sugar
Pecan filling:
1 cup chopped pecans
1/2 cup light brown sugar, packed
1/4 cup heavy cream
1 teaspoon vanilla
Cookie Dough:
3/4 cup (1 1/2 sticks) butter, softened
1 cup light brown sugar, packed
1 egg
1 teaspoon vanilla
1/2 teaspoon salt
1 teaspoon baking powder
2 cups flour
Preheat oven to 350 degrees.
In a small mixing bowl, combine all the filling ingredients and mix well. Set aside.
In a medium-sized mixing bowl, cream together the butter and brown sugar. Add in the egg and vanilla. Stir in the salt, baking powder, and flour and mix well.
Using a medium-sized ice cream scoop, scoop out the dough and roll it into a ball. Place on a parchment paper lined cookie sheet, leaving 2 inches between each ball of dough. With your thumb, create a well in the middle of each ball, being careful not to go all the way through. Place a heaping teaspoon of filling in each indentation. Bake in a preheated oven for 8-12 minutes, or until the cookies are a light golden brown. Remove from the oven and let cool for 8 minutes. After 8 minutes, move the cookies onto cooling racks and let cool completely. Enjoy!
